True Espresso is owned and operated by John Patalano. John started out in the coffee business as a barista for the award-winning La Prima Espresso Company in Pittsburgh, Pa. He soon became the company’s Roast Master, but still continued to work occasionally as a barista. This enabled him to see the entire coffee process from raw beans to the consumer’s cup.
John realizes that roasting coffee is more than just setting a timer and watching the beans tumble around in the drum. He purchases the highest quality raw beans from reputable suppliers and slow roasts them in a 6 lb. San Franciscan gas roaster. Each batch receives his undivided attention and is monitored closely for time, temperature, and color accuracy.
